The Taste Palate: Vegetarian Quesadillas

Who needs Taco Bell when you have an easy peasy recipe for vegetarian quesadillas? Quesadillas are a Mexican delight which consists of tortilla filled with lots of vegetables, beans and sometimes meat, too. They are extremely yummy, especially when they come with truckloads of cheese and guacamole sauce. I tried out this recipe and I loved it beyond words, so here I am, sharing it with you all!

INGREDIENTS: (Serves 2)

3 capsicums

2 onions

200g sweet corns

9-10 cloves of garlic

1 Avacado (optional)

Readymade Tortilla

Mozzarella cheese

Harissa sauce

Chipotle south-west

Oregano

Chilli flakes

Pepper

PROCEDURE of making Vegetarian Quesadillas:

  1. Thinly chop the garlic, capsicums and onions. Heat a pan, add some oil in it and then fry the garlic in it till it turns golden-brown in colour. Add the capsicum, onions and corns to it and fry it for 5 minutes or until they turn golden-brown. Also, add oregano, chilli flakes and pepper to the sauteed vegetables to give it some extra flavour.
  2. Take one of the readymade tortillas and lather it with butter. If you cannot readymade tortillas, you can also make it like a chapati using flour. Make sure you don’t cook it fully.
  3. Spread the sauces generously on the tortilla and add the sauteed vegetables to it. Then, add LOTS of mozzarella cheese and fold it into a half.
  4. Now you need to cook on the tortilla on a non-stick pan till all the cheese melts and it is cooked properly. Cut it in two equal halves. For the guacamole spread, you only need to peel the avocado and mash it properly. You can either add it inside the tortilla or have it with the quesadilla separately. Enjoy!
